- 1 can White Beans, Cannelini Beans or Navy Beans
- 1/2 Avocado
- 2 TBSP Nutritional Yeast
- 3 Cloves Garlic, minced or pressed
- 1/8 cup Lemon Juice
- Pepper, to taste
- Approximately 1 cup Water
- Your choice of whole grain Pasta (Angel Hair, Fettucini or Spaghetti work well)
*If you do not eat pasta, try this on Spaghetti Squash – YUM!
- 3 cups Broccoli, chopped
Cook pasta according to package directions.
Lightly steam the broccoli. In a blender, combine beans, avocado, nutritional yeast, garlic, lemon juice, pepper. Blend until combined. Heat in a saucepan over low heat. Add enough water to achieve desired consistency, and add broccoli. Toss pasta with the broccoli sauce & serve.
