Broccoli “Cream” Pasta

  • 1 can White Beans, Cannelini Beans or Navy Beans
  • 1/2 Avocado
  • 2 TBSP Nutritional Yeast
  • 3 Cloves Garlic, minced or pressed
  • 1/8 cup Lemon Juice
  • Pepper, to taste
  • Approximately 1 cup Water
  • Your choice of whole grain Pasta (Angel Hair, Fettucini or Spaghetti work well)

*If you do not eat pasta, try this on Spaghetti Squash – YUM!

  • 3 cups Broccoli, chopped
Cook pasta according to package directions.
Lightly steam the broccoli.   In a blender, combine beans, avocado, nutritional yeast, garlic, lemon juice, pepper. Blend until combined.  Heat in a saucepan over low heat. Add enough water to achieve desired consistency, and add broccoli. Toss pasta with the broccoli sauce & serve.
